This noodle soup is an all-day breakfast that\'s very comforting and light, yet wholesome. It\'s okay to ditch our rice meal for a day and enjoy this well-balanced, nourishing bowl of rice noodle broth - a real medley of flavors and textures. Heat oil in a wok and deep fry the onion to a crispy brown color 2. Add hot onion fried oil to the chilli flakes and let it sizzle 3. In another vessel, bring a pot of water to boil and add salt to it 4. Add the noodles and keep stirring often to prevent sticking. Cook as per manufacturer guidelines 5. Drain noodles in a colander and rinse under cool running water 6. Drizzle some oil to the noodles and mix to avoid sticking  PLATING (quantity as per individual taste and preference) 1. To serve, divide rice noodles among the bowls 2. Ladle the mohinga soup (https://youtu.be/8J0r24zbH0o) over the noodles 3. Serve the hard-boiled eggs 4. Top with some raw and fried onions 5. Place or squeeze in lemon 6. Garnish with coriander leaves 7. Crush the bejos (https://youtu.be/IxXt-t6ooB0) on top 8.
